Winemaking at Pulido~Walker is a strictly non-interventionist process that allows the wine to authentically reflect its origins. After several rounds of thinning throughout the growing season, we hand harvest the very best fruit from select blocks in each of our vineyards and treat it gently: carefully sorting, pre/post de-stemming, never crushing. The wine cold soaks and then ferments in small-lot tanks. We add no synthetic yeast, sulfur, acid, or enzymes and bottle without fining or filtration.
Winemaker Thomas Rivers Brown eschews technology and the manipulations that contribute to sameness. Rather than following a set schedule, his process is dictated by smell and taste. We place our faith in the raw material the vineyard provides and step aside to let the terroir speak.
